The wine cellar
It is located in the Village of As Chavolas (the local council is Cenlle) in the Ourense region. On 14.07.2004 was formed the Society for the improvement of family-run vineyards in the Councils of Ribadavia and Cenlle. The tradition for the cultivation of the vineyards dates back to our great-grandparents. The old wine cellar situated under the family house has been restored and transformed into a museum, place for wine-tasting, and storage of new bottled wine. Attached to the building, is a modern ‘bodega’, equipped with the latest technology exclusively for the production of high-quality wines. Recently we have been selected, together with a small group of ‘bodegas’, thermal spas, hotels, rural tourism houses and restaurants to create a ‘Wine route for O’Ribeiro’. Production process From the best vines of the vineyard, we select the best quality grapes. For that reason and prior to the beginning of the harvest, we follow a thorough check of the fields where the harvest will take place and at the same time we check the level of ripeness of the grape. Once the grapes have undergone all the quality checks including the check of the grape ripening, we decide when the harvest should start. Once these checks have been completed and the grapes have been harvested, the collected grapes follow a quick, cold-infusing process to add new aromas, which results in the “mosto flor”, which is then fermented at a low temperature on top of residues of the wine in stainless steel barrels.
